1kgmixedcitrus(such
asoranges,grapefruit,
lemonsandnaartjies)
1 litre(4c)water
1kgwhitesugar
Sterilize3-4glassjars.
1 Cutthefruitinto
quarters,removethe
seedsandcuttheflesh
intosuper-thinslices.
2 Heatthewaterina large
saucepanorpot.Add
thefruitandbringtothe
boil.Oncethecitruszest
issoft,addthesugar
andstircontinuously
untilthesugarhas
dissolved.
3 Simmerthemarmalade
forabout 30 minutes,
stirringoccasionally.
4 Puta littlewaterin
a bowlandadda tea-
spoonofmarmalade



  • ifthemarmaladebe-
    comesjelly-like,remove


itfromtheheat.Ifnot,
simmerforanother
10-15minutesandtest
again.
5 Bottle the hot marma-
ladeinthesterilizedjars
andseal.
