Chicken-Basil Zucchini Noodles

1 TBSP ghee

1/2 tsp onion powder
1/2 tsp dried basil powder

 J\W MYLZOIHZPSchopped, plus more
for topping

the METHOD


1 Melt the ghee in a large skillet set over medium-high heat. Add
the chicken, garlic, onion powder, dried basil, and a generous
pinch each of salt and pepper. Cook, stirring occasionally, until
chicken is browned on all sides, 6-7 minutes.
2 Add the tomatoes and sauté until blistered, 2-3 minutes.
3 Turn heat to low and add the zucchini noodles, fresh basil,
and another pinch each of salt and pepper. Sauté for about
30 seconds or until the noodles are just starting to soften.
Serve, topped with additional fresh basil.
