Plum Clafoutis

1 tsp pure vanilla extract

3 TBSP arrowroot starch
1/4 tsp sea salt

1 Preheat oven to 350ºF. Grease a 9-inch deep-dish
pie pan (or a 9-inch cake pan).
2 In a small bowl, gently toss together the plums with
2 tablespoons of the coconut sugar. Spread in an even
layer in the prepared pie pan.
3 In a blender, combine the remaining 1/4 cup of
coconut sugar, eggs, coconut milk, vanilla, almond
ÅV\YHYYV^YVV[Z[HYJOHUKZHS[)SLUK\U[PSM\SS`
combined and fairly smooth. Pour batter evenly over
the plums.
4 Bake until the crust is golden brown and set in the
center, 35-40 minutes. Let cool at least 10 minutes
before slicing and serving.
