Cookie Dough Bread

4 large eggs
1 tsp baking soda
1 cup pure cashew butter (such as Artisana)

1 Preheat the oven to 350°F. Line a 4-by-8-inch loaf pan with parchment paper.
2 In a medium bowl, combine the eggs, baking soda, cashew butter, and vanilla
JVSSHNLU)SLUK^P[OHOHUKOLSKTP_LYVUTLKP\TZWLLK\U[PSM\SS`JVTIPULK
3 Fold in your desired amount of chocolate chips. Spoon batter into the prepared
loaf pan. (The batter may be runny, depending on the brand of cashew butter used,
but this is ok.) Top with additional chocolate chips, if desired.
4 Bake until the top is golden brown and a toothpick inserted in the center comes out
clean, about 30 minutes. Cool for 15 minutes, then remove from pan and cool completely
on a wire rack before slicing. Leftovers can be stored in an airtight container in the
freezer. Thaw one slice at a time to room temperature before enjoying.
