Where to find it
Beefsteaks grow from the trunk or stump of live or dead hardwood
trees like oak and chestnut.

When to harvest it


Beefsteak season runs from late summer to late fall. Older beefsteaks
will be too tough to eat. But make a note of the tree’s location in your
forager’s notebook and look again next year.

How to gather it
Since, as a good forager, you are always carrying a pocket knife with
`V\\USLZZ`V\»YLVU`V\Y^H`[V[OLHPYWVY[ZSPJL[OLT\ZOYVVTVɈ
where it meets the tree bark. Carry it home in a paper bag rather than
plastic so it can breathe. Mushrooms stored in plastic bags will grow a
surface layer of bacteria.

How to prepare it
One of the very few mushrooms best eaten raw, it’s saturated with
JP[YPJHJPKOLUJL[OLSLTVU`ZJLU[HUKÅH]VY;OLHJPKP[`^HYKZVɈ
bacteria and bugs. Slice thinly and serve in a salad or as a substitute
for beef in a carpaccio dish.

How to preserve it
Soak it in water with salt and pepper, and then run through a
