What you need:

t2 eggs t ¹/³ cup (75g) caster sugar

t¹/³ cup plain flour sifted t 30g butter, melted

t½ teaspoon finely grated lime rind

t12 small paper messages t 1glass

What to do:

Step 1: With an adult’s help, preheat oven to 160

degrees celsius. Grease oven tray; line with baking

paper. Draw 12 9cm circles on the paper.

Step 2: Beat egg whites in small bowl with electric

mixer, add in sugar until all is dissolved.

Step 3: Fold in sifted flour, butter and rind. Drop one

level tablespoon of mixture into centre of each

circle on oven tray, spread evenly to cover circle

completely. Bake for about five minutes.

Step 4: Working quickly, loosen cookies from tray and

place a message in the centre of the cookies; fold in

half, then gently bend cookies over the edge of

your glass to create the shape of the fortune cookie.

Pop cookies on a wire rack to cool and then enjoy!
