4 Drizzle over the
salad and serve.
LABNEH DIP
5g fresh mint;
300g labneh; 1tsp salt;
2 spring onions, finely
chopped; 5 cherry tomatoes,
each cut into 8 pieces
To serve: extra-virgin olive oil;
sprigs of mint; 2-3 cherry
tomatoes, quartered
1 Pull the mint
leaves off the sprigs
and chop finely.
Place in a small
mixing bowl and
spoon in the labneh,
salt, spring onions
and cherry
tomatoes.
2 Beat all the ingredients
together until the juice bursts from
the tomatoes and everything is
mixed well.3 Spoon the mixture into a
small bowl and use the back of
a spoon to make a hollow in the
middle.
4 Drizzle a little olive oil into
the hollow, then arrange a few mint
leaves around the outside,
