lemon and serve with potatoes and salad for a healthy and quick lunch or supper. Serves 4.INGREDIENTS4 fillets salmon2 tablespoons olive oil2 tablespoons capersPinch salt and pepper4 wedges lemon to garnishSalmon with capers
METHOD
1) Preheat a large
heavy frying pan over
medium heat for 3
minutes.
2) Coat the salmon
with olive oil. Place in
the frying pan, and
increase heat to high.
3) Cook for 3
minutes.
4) Sprinkle with
capers, salt and
pepper. Turn salmon,
and cook for 5
minutes, or until
browned. The salmon
is ready when it
flakes easily.
5) Transfer salmon to
individual plates, and
garnish with lemon
wedges, if desired.
