15ml(1T)oil
1 redonion,sliced
2 garliccloves,chopped
100gbacon,chopped
300gspinach,chopped
gratedzestof1 lemonand
15ml(1T)lemonjuice
1 tub(250g)herb-flavoured
creamcheese
250ml(1c)milkORcream
saltandfreshlyground
pepper
500g penne pasta, cooked
untiljustdonebutstillfirm
TOFINISH
250ml(1c)mozzarella
cheese,grated
15ml(1T)oliveoil
handful of fresh herbs OR
rocket (optional)

Preheat the oven to 200°C.
Grease a medium oven­
proofdishor 2 loaftins
withnonstickspray.
1 Heattheoilina large
panandfrytheonion
andgarlicuntilfragrant.
Addthebaconandstir­
fryuntildone.
2 Addthespinach,cover
thepanwitha lidand
steam­fryfor 5 minutes.
Removethelidandstir­
fryuntilthespinachis
wilted.
3 Stir the zest and juice,
cream cheese and milk
or cream into the spinach
mixture and heat. Season
withsaltandfreshly
groundpepper.
4 Pourthesauceoverthe
pastaandmix.
5 To finish Transfer the
pasta to the ovenproof
dish or loaf tins. Sprinkle
thecheeseontopand
drizzletheoilover.Bake
for 15 ­ 20 minutesoruntil
thecheesehasmelted.
6 Sprinkle the herbs or
rocket over and serve.
