heat and let it simmer for a
couple of minutes to heat the
sauce through. Pop in a few
torn-up basil leaves to let them
wilt, and serve. Again, I garnish
with halved cherry tomatoes and
also add some grated cheese on
top – Parmesan or cheddar, etc,
your choice, they all work!

RECIPE 3
The final recipe, spaghetti
carbonara, is a little more
involved. For this you’ll need two
eggs, Parmesan cheese, a
couple of rashers of bacon,
spaghetti, garlic and some olive
oil. Cook the pasta to your taste;
while doing so, pop the eggs in a
bowl with the Parmesan and
some salt and pepper and mix.
Then dice up the bacon into
small cubes and cook in a frying
pan with the olive oil and garlic
until the bacon crisps up.

Voilà: spaghetti carbonara, recipe 3. Delicious!

Drain the spaghetti but save a
small amount of the water,
remove the garlic from the pan,
add the spaghetti to the pan with
the bacon and stir well, adding a
splash of the water. Then pour in
the egg mix, stir well, adding
some more of the water if
necessary, and there you have it,
delicious spaghetti carbonara.
Serve straight away with salt,
pepper, Parmesan, halved cherry
tomatoes – and I like to add a
sprinkling of grated cheddar on
top, just for good measure!
That’s this month’s recipes,
just three ways of the hundreds
available to you with pasta. This
Italian wonder is a very forgiving
food, so experiment with different
sauces and the like. Or adapt
one of these; for instance, add
some minced meat to the second
recipe and, hey presto, you
effectively have a Bolognese.

Chicken and/or
bacon also works
nicely when added to
recipe 1, ‘my mum’s’
cheesy pasta; there’s
almost no limit to
pasta’s versatility.
