LAMB& ROSEMARYPIES

2 tablespoonsoliveoil
400gdicedlamb
4 babyonions(100g),quartered
1 tablespoonplainflour
¼cup(60ml)dryredwine
¾cup(180ml)beefstock
1 tablespoontomatopaste
1 tablespoonfreshrosemaryleaves
2 sheetsfrozenpuffpastry,
justthawed
1 egg,beatenlightly


1 Heathalftheoilina large
saucepanovermedium-highheat;
cooklamb,inbatches, until browned.
Removefrompan.
2 Heatremainingoilinsamepan;
cookonion,stirring,for5 minutes
oruntilsoftenened.Addflour;cook,
stirring,untilmixturebubblesand
thickens.Graduallyaddwine,stock,
pasteandrosemary;stiruntil
mixtureboilsandthickens.Stirin
lamb; season. Cool for 10 minutes.


3 Preheatovento200°C/180°C
fan.Oilfourholesofa 6-hole
(¾-cup/180ml)texasmuffinpan.
4 Usinga 14cmcutter,cuttwo
roundsfromoppositecornersofeach
pastrysheet.Usinga 9cmcutter,cut
tworoundsfromremainingcorners
ofeachsheet.Liftlargerpastry
roundsintopanholes,pressinginto
baseandside;prickbaseswith
a fork.Oiltheundersideofanother
texasmuffinpan;placeontopof
pastrylinedpanholes(thisstops
thepastryfromrisingtoomuch).
Placesmallerpastryroundson
baking-paper-linedoventray;
refrigerateuntilrequired.
5 Bakepastrycasesfor 15 minutes
oruntilbrownedlightly.
6 Spoonlambmixtureintopastry
cases;brusharoundedgeswith
a littleegg.Toppieswithchilled
smallerpastryrounds;gentlypress
edgestoseal.Brush tops with
remainingegg.
7 Bakepiesfor 15 minutesoruntil
goldenbrown.Leavepiesinpan for
5 minutes before serving.

6 sheetsfrozenpuffpastry,
justthawed
1 egg,extra,beatenlightly
2 tablespoonssesameseeds

1 Preheatovento220°C/200°Cfan.
Lineoventrayswithbakingpaper.
2 Combineonion,breadcrumbs,
sausageminceandbeef,egg,tomato
paste,sauceandparsley in a large
bowl.Season.
3 Cutpastrysheetsinhalflengthways.
Placeequalamountsoffillingmixture
lengthwaysalongcentreofeachpastry
piece;rolleachpastrypiece,fromone
wideedge,toenclosefilling.Cuteach
rollintofourpieces;placerolls,
seam-sidedown,ontrays.Brushwith
extraegg,sprinklewithsesameseeds.
4 Bakefor 25 minutesoruntilgolden
andpuffed.Serverollshotwithtomato
sauce or chutney, if you like.
