chocolatewilloverheatandseize
(turnhardandgrainy).Stiruntil
thechocolateismeltedthen
removefrom the heat.

Colouringchocolate
On cemelted,adda droportwoof
colourtothechocolate.Usecolouring
that’ssuitableforchocolate,as
thesedon’t‘seize’chocolatelike
water-basedonestendto.If tinting
a pastelcolour,foodcolouringsfrom
supermarketsarefineasyouonly
needa little;fordarker more bold
colours use paste.

Colouringsugarorcoconut
Placethesugar(orcoconut)in
a smallziptopbag,andadda few
dropsoffoodcolouring.Massage
thecolouringintothesugar/coconut
untilit isevenlycoloured.Addthe
colouringa dropata time,untilyou
get the depth of colour you want.

domedtopscutoffsothatthe
cakessitflatona cakeboardor
plate.Usea largesharp serrated
knife todothis.

BUTTERCREAM
Basicbuttercreamis alsoknown
as viennacream;theflavourcan
bevariedbyaddingany extract
or essence you like.


125gunsaltedbutter,softened
1½cups(240g)icingsugar
2 tablespoonsmilk


1 Beatthebutterina smallbowl
withanelectricmixeruntilaswhite
aspossible.Graduallybeatinhalf
thesiftedicingsugar,milk, then
remaining icing sugar.


CHOCOLATEVARIATION
Sift⅓cup(35g)cocoapowderin
with the first batch of icing sugar.
