350gwholehot-smoked trout,
fleshflaked


1 Spraycorncobswithoil.

barbecue(orgrillplate)
overhighheatfor
12 minutes,turning
occasionally,oruntil
kernelsareslightly
charredandtender.
Whencoolenough
tohandle,cut
kernelsfromcobs.
2 Meanwhile,
reservefrondsfrom
fennel.Trimfennel;
chopcoarsely.

10 timesoruntilfennel
resemblesgrainsofrice.

saucepan.Meltbutterin
