1 cup(80g)desiccatedcoconut
1/3 cup(55g)whitechiaseeds
1 cup(240g)coconutoil,melted
1/3cup(80ml)puremaplesyrup
1 cup(90g)rolledoats
1 cup(150g)sunflowerseeds
1 cup(120g)pecans,chopped finely
(seenotes)
1 cup(200g)pepitas
½ cup(75g)driedapricots,chopped
finely(seenotes)
8 freshdates(230g),pitted, chopped
finely(seenotes)

1 Greasea 20cmx 30cmslicepan;
linebaseandsideswithbaking
paper,extendingthe paper 5cm
overtheedge.
2 Combinealmondmeal,desiccated
coconutandchiaseedsina medium
bowl.Addhalftheoiland¼cup
ofthemaplesyrup;mixwellto
combine.Pressthealmondmixture
intothepanandlevelthetop.
3 Combineoats,sunflowerseeds,
pecans,pepitas,apricotsanddatesin
a mediumbowl.Addtheremaining
coconutoilandmaplesyrup;mix
welltocombine.Placefruitmixture
overalmondmixture;pressdown
veryfirmly.Cover;refrigeratefor
4 hoursoruntilchilled and firm.
Cut into 18 bars.

choppedcoarsely
4 eggs
1 teaspoonvanillaextract
¼ cup(60ml)puremaplesyrup
½ cup(120g)coconutoil,melted
½ cup(70g)coconutflour
1 teaspoonbicarbonateof soda
1 teaspoonmixedspice
¼ cup(35g)cacaonibs
2 tablespoonssunflower seeds
1 tablespoonpepitas


1 Steampumpkinfor 15 minutes
oruntiltender;drain. Mash until
smooth;cool.
2 Meanwhile,preheatovento
180°C/160°Cfan.Greasean11.5cm
x 21.5cm(topmeasurement)loafpan;
linebaseandsideswithbakingpaper.
3 Whiskeggs,vanilla,maplesyrup
andcoconutoilina largebowl.Stirin
mashedpumpkin.Addcoconutflour,
bicarbonateofsoda,mixedspice,
cacaonibsandhalfthesunflower
seeds;stiruntiljustcombined.Spoon
mixtureintopan.Scatterwithpepitas
andremainingsunflowerseeds.
4 Bakebreadfor 40 minutesoruntil
a skewerinsertedintothecentrecomes
outclean(afewmoistcrumbsthatcling
totheskeweris fine).Leavebreadin
panfor 15 minutesbeforeturning,
top-side up, onto a wire rack to cool.
