WITHSPAGHETTI
PREP+ COOKTIME 50 MINUTES SERVES 4

2/3cup(80g)frozenpeas
2 cups(500ml)boilingwater
2 teaspoonsfinelygratedlemonrind
¼cupcoarselychoppedfresh mint
350gmincedchicken
2 clovesgarlic,crushed
¼cup(25g)driedmultigrain
breadcrumbs
1 egg
1/3cup(80g)freshricotta
1 tablespoonextravirginoliveoil
800gcanneddicedtomatoes
3 teaspoonsbalsamicvinegar
500gspeltspaghetti
2 tablespoonsfinelygratedparmesan

1 Preheatovento240°C/220°Cfan.
Oilandlinea shallow roasting pan
withbakingpaper.
2 Placepeasina mediumheatproof
bowl;coverwiththeboilingwater.
Standpeasfor1 minute;drain,
reserving1 tablespoonofthewater.
Blendorprocesspeas,reserved
water,rindandchopped mint until
justcombined.
3 Combinechicken,garlic,
breadcrumbsandeggina medium
bowl;mixwell. Stir in pea mixture
andricotta.
4 Usingwethands,rolllevel
tablespoonsofmixtureintoballs.
Placeinroastingpan;drizzle
withoil.Roastmeatballsfor
15 minutes,turningonce.Add
tomatoesandvinegar;roastfora
further 15 minutesoruntilmeatballs
arecookedthroughandsauceishot.
5 Meanwhile,cookpastaina large
saucepanofsaltedboilingwater
followingpacketdirections until just
tender.Drain.
6 Dividepasta,meatballsandsauce
amongplates;season.Topwith
parmesan and micro herbs, if you like.

400gmacaroni
300gbroccoli,cutintoflorets
4 rashersbacon,chopped
2 clovesgarlic,crushed
50gbutter,chopped
1/3cup(50g)plainflour
1 litre(4cups)milk
1 cup(80g)finelygratedparmesan
2½cups(400g)choppedbarbecue
chicken
1 cup(120g)frozenpeas
½cup(35g)panko(Japanese)
breadcrumbs
20gbutter,melted,extra
2 tablespoonschoppedfresh
flat-leafparsley
1 cup(100g)gratedmozzarella


1 Preheatovento220°C/200°Cfan.
Oila 3-litre(12-cup) ovenproof
dishorpan.
2 Cookmacaroniina largesaucepan
of boiling salted water until al dente.


Addbroccolitopan;boilfor
2 minutes.Drainmacaroniand
broccoli;transfertoa largebowl.
3 Meanwhile,cookthebaconina
mediumfryingpanovermediumheat
forabout5 minutesoruntilbrowned
lightly.Addthegarlic;cook,stirring,
untilfragrant.Addtobowl.
4 Meltbutterinthesamelarge
saucepanovermedium-highheat.
Addtheflour;cook,stirring,for
1 minuteoruntilbubbling.Gradually
stirinmilk.Cook,stirring,until
mixtureboilsandthickens.Stirin
parmesan;seasontotaste.Transfer
tothebowlwiththemacaroni;stir
inchickenandpeasuntilcombined.
Seasontotaste.Transfermixture
totheovenproofdish.
5 Combinebreadcrumbs,extra
butter,parsleyandmozzarellain
a smallbowl;sprinkle over pasta
mixtureindish.
6 Bakeforabout 10 minutesoruntil
brownedlightly.Servewarm with
mixed salad, if you like.
