1 cup(240g)lightsourcream

flat-leafparsley
¼cup(20g)finelygrated parmesan

200ggreenkale,washed,dried
1 clovegarlic,crushed
2 tablespoonsoliveoil
1 Makekalechips.
2 Cookpastaina largesaucepanof
saltedboilingwaterfollowingpacket
directionsuntilaldente;drain.
3 Meanwhile,coatbeefinflour;
shakeoffexcess.Heatoilina large
saucepanoverhighheat;cookbeef,
inbatches,untilbrowned.Remove
frompan;covertokeepwarm.
4 Meltbutterinsamepan;cook
onion,garlicandmushrooms,
stirringoccasionally,untilsoftened.
Addbrandy;cook,stirring,for
30 seconds.Addstock;bringtothe
boil.Reduceheattolow;cookfor
5 minutes.Addbeefandsourcream;
stiruntilsmooth.Removefrom
heat;season.Addparsley; stir
untilcombined.
5 Servepastatoppedwithbeef
mixture, parmesan and kale chips.

stalks;tearinto3cmpieces.Discard
stalks.Divideevenlybetweenlined
trays.Combinegarlicandoil,drizzle
halfovereachtrayofkale;tosswell
tocoat.Spreadkaleoutina single
layer.Roast,turningkaleand
swappingtraysfromtoptobottom
shelvesofovenhalfwaythrough
cookingtime,for 8 minutes or until
kale is crisp.
