¼ cup(65g)whitemisopaste
¼ cup(60ml)puremaplesyrup

1 tablespoonmirin
2 teaspoons water
1 tablespoonoliveoil
¼ teaspoonsesameoil
200gsugarsnappeas,
halvedlengthways
170gasparagus,cutinto4cmlengths
400gbabycarrots,trimmed,
halvedlengthways
12 radishes(300g),trimmed,
scrubbed,halved
½ cup(75g)roastedcashews,
choppedcoarsely
1 Preheatovento200°C/180°Cfan.
2 Cuta crossinbaseofcauliflower
witha sharpknife.Placecauliflower
ina large,cast-ironcasseroledishor
deeproastingpan. Pour sherry into
baseofdish.
3 Combinemiso,maplesyrup,oil,
gingerandgarlicina smallbowl;
season. Spread over cauliflower.
Coverdishwithlidorfoil;roastfor
20 minutes.Sprinklecauliflowerwith
halfofthesesameseeds;roastfora
further 15 minutesoruntilcauliflower
istenderandbrownedlightly.
4 Meanwhile,makevegsalad.
5 Sprinklecauliflowerwithremaining
sesameseeds;servewithvegsalad.
Sprinklewithmicroradishleaves
before serving, if you like.
VEGSALAD
Placenutspread,miso,mirin,the
water,oliveoilandsesameoilina
smallscrew-topjar;shakewelluntil
smoothandcombined.Boil,steam
ormicrowavesugarsnappeasand
asparagusuntiltender;drain.Cover
tokeepwarm.Placeallvegetables,
cashewsanddressing in a large bowl;
toss to combine.
