ROASTPUMPKIN
& BEETROOTSALAD
PREP+ COOKTIME1 HOURSERVES 4

1 cup(200g)greenwheatfreekeh
1/4cupextravirginoliveoil
1 teaspoongroundcoriander
800gpumpkin,cutintothickwedges
4 medium(700g)beetroots, peeled,
cutinto2cmpieces
50gbabyrocketleaves
½cup(40g)roastedcashews,
chopped
mustardcress, to garnish

DRESSING
1 tablespoonfinelychopped
lemongrass
¾cup(200g)Greek-styleyoghurt
1 tablespoonlimejuice
1 teaspoonfinelygrated ginger
½teaspoonseasalt

1 Preheatovento180°C/160°C
fan.Linetwobaking trays with
baking paper.

2 Placefreekahina saucepanwith
1½litresofwaterand1 teaspoon
ofseasalt.Bringtotheboil:reduce
heatandsimmer,partiallycovered,
for 45 minutesoruntiljusttender.
Drainwell;transfer to a large
bowltocool.
3 Meanwhile,place2 tablespoonsof
theoilina largebowl.Addground
corianderandseasonwellwithseasalt
andfreshlygroundblackpepper.Add
pumpkinpiecesandtosstocoat,then
transfertooneofthepreparedtrays.
4 Addbeetroottothebowlandtoss
intheremainingoil. Transferto
preparedtray.Roastthebeetroot
andthepumpkin in the oven for
40 minutes.
5 Makedressing.
6 Arrangethefreekah,rocket,
beetrootandpumpkinona serving
plate;drizzlewithdressingand top
with the cashews and cress.

DRESSING
Combinealltheingredients in
a small bowl or jug.

SOBANOODLESALAD
WITHFRIED PRAWNS
PREP+ COOKTIME 35 MINUTESSERVES 4


16 (1kg)uncookedkingprawns
300gsobanoodles
1 tablespoonextravirginoliveoil
2 largefreshredchillies,seeded,
slicedthinly
100gbabyspinachleaves
2 greenonions,slicedfinely
10 snowpeas,trimmed,
slicedfinely
corianderleaves, to serve


DRESSING
2 stickslemongrass,whitepartonly,
choppedfinely
1 tablespoonfinelygratedfreshginger
1/4cup(60ml)soysauce
1/4cup(60ml)sesameoil
1½tablespoonsbalsamicvinegar
2 tablespoonscastersugar
2 tablespoonslimejuice


1 Makedressing.
2 Shellanddeveintheprawns,
leavingtheirtailsintact.
3 Bringa largesaucepanofwaterto
boil;cooknoodlesuntiljusttender.
Drain;transfertoa largebowl.Toss
a littledressingthroughnoodles.
4 Meanwhile,heata largefryingpan
overhighheat;addoil.Cookthe
prawns,inbatches,fora fewminutes
oneachsideoruntilbrownedlightly.
Removefrompan.Addchilliand
spinachtothepan;stir-fryuntil
spinachisjustwilted.Addthe
noodles,onionandsnow peas;
tosstocombine.
5 Dividethenoodlemixturebetween
bowls.Topwiththeprawnsand
thecoriander.Spoonover the
remainingdressing.


DRESSING
Placeallingredientsina screw-top
jar; shake to combine.
