Stir2 teaspoonsgratedlimerind,
1 tablespoonlimejuiceand¼cup
desiccatedcoconutintomixture.Spoon
into holes; top with flaked coconut. Bake.

smooth.Withmotorrunning,

and½cupextravirginoliveoil,
a teaspoonata timetobegin
withthenina thin,steady
streamuntilthickened.Add
1 tablespoonlemonjuiceand
a littlehotwaterif needed
for consistency.

6 eggwhites
185gbutter,melted
1 cup(120g)almondmeal
1½cups(240g)pureicing sugar,
plusextrato serve
½ cup(75g)plainflour

1 Preheatovento200°C/180°C
fan.Greasea 12-hole
(½-cup/125ml)ovalfriandpanor
rectangularminiloafpantray;line
thebaseswithbakingpaper.
2 Placeeggwhitesina medium
bowl,stirwitha fork.Addthe
remainingingredientstobowl;stir
untiljustcombined.Spoonmixture
intopanholes.Bakefor 20 minutes.
3 Leavefriandsinpanfor5 minutes
beforetransferringtoa wirerackto
cool.Servedustedwith a little extra
sifted icing sugar.
