METHOD

• Sandwichtwodiscsofspongecakewith
  themarmalade.


• Putorangesegmentsintothebottomof
  themartiniglasses.


• Putasandwichofspongeontop.


• Mixthecitrusrindandjuiceswiththe
  sugarthoroughly.


• Whip^425 mlcreamuntilthickbut
  notstiff.


• Slowlybeatthejuicesintothecream.


• Spoonoverthecakeandchilluntilthe
  creamsetsandthejuicehasseparatedover
  thecake,preferablyovernight.


• Whiptherestofthecreamandpipeon
