BEET THAT!
Rich in vitamins A, B6,
and C, antioxidants, iron,
potassium, calcium,
folate, dietary fi bre and
manganese, beetroots are
truly versatile as well.
In the news for a while now
as a functional food that
promotes good health,
beetroot powder is simply
beetroot in powdered
form, and, even if you care
nothing for its healthy
properties, it makes a great
natural food colouring for
red velvet cake! It can also
be sprinkled on salads
and added to water to
make a nutritious drink,
and to smoothies to up
their goodness. Best of all,
it can be made at home.

Beetroot powder
Ingredients
2 medium beetroots

Method
Wash and peel the
beetroots. Slice thinly and
uniformly using a mandolin.
Spread the slices in a single
layer on baking trays.
Preheat the oven at the
lowest temperature setting.
Place the trays of beetroot
slices in the oven
and bake for a day
to dehydrate them.
When the beets are crisp,
remove from the oven,
cool, and grind to a fi ne
powder. Leave the mixer jar
closed for 10 minutes for
the powder to settle before
opening the lid.
Transfer to an airtight
container and refrigerate.
Use as needed!
The powder can be stored
in the refrigerator for
up to a month.
