FOOD PORN

old part of Amritsar would know that
the food in the tiny shops in the lanes
is often the. Often the food made here
is made in the most traditional way
and also backed by generations of
experience and expertise. I felt nostalgic
on seeing the live counters of Amritsari
food at the fest. The street food in
Amritsar is famous for its great flavours
and impressive variety, Executive Chef
said, “From the typical breakfast of
bread omelette to their signature imli ki
chatni, we have everything on the menu.
The Amritsari menu also includes Pithi
Poori, Aloo Launji, the quintessential
Amritsari Phirni and much more”.
The way the Puri was being deep fried
caught my eyes and the taste of Puri
Chana caught my soul. Honestly, this
taste will never leave your mind.
Moving on next, we were introduced
to the street food of Indore. Indore is
a city that prides itself on its food. It’s
the only city that I can think of where
they have a whole street famously
called ‘Sarafa’ that serves the most tasty
vegetarian snacks, chaat and sweets

right. While Indore lacks the storied
history of Delhi’s Mughlai cuisine or the
foreign influences entrenched firmly
in the food of Mumbai and Kolkata, it
draws heavily on culinary legacies of
the neighbouring states of Rajasthan,
Maharashtra and Gujarat. JW Marriott,
we were presented with the authentic
and exquisite coconut stuffed patty
known as Khopra Patties. They are
delicious balls of fried potato with a
surprise coconut centre dunked with
a lot of green and red chutney, Indori
Pineapple Sev, which is a fusion of
the traditional Ratlami Sev and the
sweet and tangy flavour of Pineapple,
a refreshing Indian Kombucha or
Kanji Wada, dahi vada , which is a dish
comprising of fried and soaked balls of
crushed lentils dipped in curd with the

addition of spices and tangy chutneys
to complete the taste. This is one dish
of Indore for which the words fall short
and it is only the experience of tasting
them that truly can help you understand
their impeccability. Last but not the

least, Poha and Jalebi, relish the delicate
sweetness of jalebis after the savoury
tang of poha, one of the best of all.
Lucknow, the land of Awadhi cuisine,
has much more to offer than what
meets the eye. The taste, the fragrance
of the Luchnowi street food screams
magic! It is a Lucknowi riot of mildly
spiced delicacies bursting with flavours,
even though the list of delicacies at
JW Marriott is endless, here are some
mouth-watering dishes, and like being a
meat- you just simply can’t miss out on
these tender spiced Galawati kebabs, the
kebabs tender to melt inside the mouth
without even making an effort to chew
them. Another delectable Lucknowi
Street food favourite is the tangy and
spicy Khasta Kachori served with Bhaaji,
a popular evening snack in the region.
A must try is Dhudh Chana, you can try
this recipe at home and enjoy it with
chai.
We often visit a lot of places, and
what stays with us is the experience.
And this is one experience that you
wouldn't want to miss!
