Our Relationship to Real Food
AS WE EXAMINE FOOD this issue, we must acknowledge that “real food” contains
many meanings. For some, it’s haute cuisine — meticulously prepared and elabo-
rately presented meals from professional chefs. For others, the simpler and more
comforting the food, the more real it is. Some focus on family recipes. And still oth-
