Serves 8 to 10

Plus 1 hr 10 min cooling time

Streusel
1∕3 cup all-purpose fl our
1∕4 cup granulated sugar
1∕4 cup cold unsalted butter,
cubed
1∕2 cup chopped pecans

Cake
2 cups all-purpose
fl our
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1∕2 tsp cardamom
1∕2 tsp salt
2∕3 cup unsalted butter,
softened
1 cup granulated sugar
2 eggs
1 tsp vanilla
1∕2 cup sour cream
3 cups chopped
rhubarb

1. Position rack in centre of
oven, then preheat to 325F.
Spray a 9-in. springform pan
with oil, then line bottom
with parchment.
2. Streusel: Combine fl our
and sugar in a medium bowl
and, using fi ngers, work in
butter until mixture is
crumbly. Stir in pecans.
3. Cake: Whisk fl our, baking
powder, baking soda,
cinnamon, cardamom and
salt in a medium bowl.
