“Friends had told me that the
manta ray night dive in Kona,
Hawaii, was a must. I found
myself kneeling on the sea
floor, 10 meters down, lights
set up by dive boats within
a circular arrangement of
rocks. A couple of manta rays
came by to feed on plankton
and one swooped right past
my head before making its
way back to the center. As
the ray glided so majestically
upwards, I hit the shutter
button. Each manta ray has
a marking on its belly that
looks like an ink blot. Like our
fingerprints, these markings
are unique, which is how dive
masters tell them apart.”

“I’d tried Kavalan Solist Vinho
Barrique in Bangkok and
loved it, so I was prepared
for the quality of Taiwanese
whisky. But I was a big fan
of Omar’s Cask Strength
Bourbon Aged variety. Like
the country’s other single
malts, it was easy drinking
and smooth with hints of
fruit, but with nice spicy notes.
I was impressed by the depth
of knowledge and appreciation
for whisky at the various
specialty bars in Taipei. These
guys are true obsessives.
MOD Public Bar had friendly
staff, great cocktails as well
as whisky, and played Britpop
all evening. My sort of place.”

“A meal at Zén, the new fine-
diner in Singapore, is totally
worth it. I can’t stop thinking
about the binchotan-grilled
kinmedai, exquisite petits
fruits desserts, and rare sake.
The experience compared
favorably to the 20 courses I
had at Stockholm’s Michelin
two-starred Oaxen Krog—
including a 200-year-old
mahogany clam, and wooden
crockery handmade by chef-
owner Magnus Ek. Another
memorable meal was at the
Kyubey sushi restaurant in
Tokyo. The ingredients were
so fresh that one of them—a
prawn—hopped off the plate
in a vain bid to get away.”
