STEP 1 Place a cake layer, fl at side
up, on the cake plate, and add about
1 cup frosting to the center of the
layer. Using an off set spatula, gently
spread the frosting from the center
out to the edges, leaving a small
unfrosted border around the sides.
STEP 3 Repeat the frosting
procedure from step one. Leaving a
small border around the sides of the
cake layers allows for the frosting
to naturally spread to the edges as
layers are added.
STEP 5 To cover the cake with frosting,
add the remaining frosting to the top
of the cake, spreading it out to the
edges and over and down the sides
of the cake. This gives the cake more
even coverage than if you were to
spread frosting directly onto the sides
of the cake.
STEP 2 Add another cake layer, fl at
side up, on top of frosting. Be sure to
center the second cake layer on top
of the fi rst.
STEP 4 If you plan to transport your
cake, or simply want to give it more
stability, insert 3 to 4 wooden skewers
around the center of the cake from
the top to bottom; trim the skewers
fl ush to the top of the cake before
covering it with frosting. Take note of
how many skewers you add so you
can remove them all when you slice
and serve the cake.
STEP 6 To smooth out the frosting,
hold the spatula vertically against
the side of the cake while you slowly
turn the cake plate with your other
hand.
