1 Whisk the eggs. 2 In a medium non-stick
pan,meltthebutteroveralowheat,then

pour in the egg. 3 Gently push the edges of
theomeletteinusingaspatulasothatthe
uncookedeggrunsontothehotsurfaceof
thepan.Cookfor7minutes,thenaddthe
toppings.Whentheomelettelooks70%
cooked,foldandremovefromthepan.
Ifyou’reusinganovenproofpan,bakethe
omeletteintheovenat180°Cfor2minutes.

Creamy corn, bacon and mushroom
Beforeyouwhisktheeggs,reduce½cup
cream in a medium saucepan. Pan-fry

kernelstothecreamandcookforafurther
3minutes.Servetheomelettewiththe
creamycorn,baconandmushrooms.

omelette
Forthisomeletteyoucanuse4eggwhites.
Whisk until medium peaks form, then cook
inanonstickpan.Heat1toliveoilina
separate pan over a high heat, add 1 thinly
slicedredpepperandcookfor5minutes.
Add100gbabyspinachandpan-fryfora
further10minutes.Finishoffintheoven
for10minutesat180°C,thentopwiththe
spinachandredpepperandseason.

Cut200gpaneerintobite-sizedpieces,

While the omelette is cooking, blanch

smooth cottage cheese 4 T
anchovies30 g
Rosa tomatoes100 g, halved

1 Usingahandblender,blendthebutter
and parsley. Allow to stand at room
temperature until serving. 2 To as t the
bread, then top with cream cheese,
anchovies, tomatoes and parsley butter.

FRIED EGGS IN BROWN
BUTTER WITH LABNEH
AND CORN “RIBS”

sunflower oil,for deep-frying
sweetcorn2cobs
Woolworths labneh2x150gtubs
red chilli1, finely chopped
Maldon salt,to taste
dukkah1t
dill, chopped, to garnish

1 Meltthebutterinalargepanandfrythe
eggsuntilcookedtoyourliking. 2 Heat the
oilinadeepsaucepan.Carefullycutthe
cornfromthecobsusingasharpknifeso
youhave4stripsfromeachcob,making
sure you keep the core attached. 3 Deep-
fry until golden brown and curled. Drain
on kitchen paper. 4 Smear the labneh onto
four plates, top with an egg and chopped
chilli. Serve with the corn ribs and drizzle
overthebutterfromthepan.Season and
sprinkleoverthedukkahanddill.

VANILLA OAT BOWL

coconut milk1litre
ground cinnamon1t
ground nutmeg ¼ t
sea salt1t
vanilla pod1, seeded
Muscovado sugar4T
green apple1, cut into matchsticks

1 Inamediumsaucepan,combinetheoats,
coconut milk, cinnamon, nutmeg, salt and
vanillaseeds.Cookfor10–12minutesor
until the oats are tender. 2 Sprinkle with
the sugar and top with the apple.
