flavourandtendstobejuicierthanwhite
meat (breasts) and filleted portions.”

free-range skinless chicken legs 6
free-range skinless chicken thighs 6
garlic4cloves,crushed
fresh ginger1tfinelygrated
sea salt and freshly ground black
pepper,to taste
tandoori paste30 g
tandoori spice blend1T
double-cream plain yoghurt 300 g
(or thick plain yoghurt)
garlic2bulbs,toppartcutoff
green beans200g,trimmed
sugar snap peas125g,trimmed
olive oil2T,plusextrafordrizzling
Woolworths mashed potato,for serving
1 Scoreeachchickenpiecewith3deep
incisions and place in a large, flat dish.
Rubthechickenwiththegarlic,ginger,
saltandpepper.Mixthetandooripaste
andspicewiththeyoghurtandpourover
the chicken, making sure it penetrates the
incisions.Marinatefor4hoursorideally
overnight. 2 Preheat the oven to 200°C and
lightlygreaseabakingtraywithoil.Place
a griddle pan over a high heat. 3 Cook the
chickeninthehotpanfor2minuteson
each side, until it has griddle lines. Transfer
tothebakingtray,addthegarlicbulbsand
pouroversomeoftheleftovermarinade.
Roast for 25 minutes, or until cooked
through. 4 Meanwhile, heat a clean griddle
pan until very hot. Toss the beans and sugar
snap peas in olive oil and season lightly. Grill
for1minuteoneachside,oruntiltheyhave
charlines.Setaside.Oncethechickenis
cooked, arrange the grilled greens around
thechicken.Roastfor5minutes and serve
with the mashed potato.
Cook’s note:Forevenbetterresults,braai
the chicken instead of pan-grilling it for an
intense smoky flavour synonymous with
tandoori (which is traditionally made in
aclayoven),thenfinishitoffintheoven
tomakesureit’scookedthrough.
