Savoury waffle dippers
Serves about 8
YOU WILL NEED
FOR THE BEETROOT HUMMUS
410g tin chickpeas, drained
1 cooked beetroot
1 garlic clove, crushed
½ tsp cumin (optional)
2 tbsp plain yoghurt

FOR THE WAFFLES
1½ cups self-raising flour
½ cup Cheddar, grated

1 medium zucchini,
finely grated (excess
liquid squeezed out)
1 carrot, finely grated
4 thin slices ham, finely
chopped (optional)
½ cup sunflower oil + extra
215g tin creamed corn
¾ cup milk
2 eggs
Pinch salt

METHOD
1 For the hummus, blitz together all
the ingredients. Season with salt.
2 For the waffles, combine the flour,
Cheddar, veggies and ham. Add
the oil, corn, milk, eggs and salt.
3 Heat waffle maker on medium high
and grease with extra oil. Add about
125ml of the batter, close lid and
cook for 2 to 3 minutes on each side.
Repeat with the rest. Cut into wedges.

Carrot sticks
with pea dip
Serves about 6
YOU WILL NEED
FOR THE CARROT STICKS
1½ cups grated carrots
½ cup cheddar cheese, grated
2 eggs
¼ cup oat flour

FOR THE PEA DIP
1 cup cooked peas
400g tin cannellini beans, drained
2 tbsp tahini
2 tbsp lemon juice
2 tbsp olive oil

METHOD
1 For the sticks, preheat oven to 180°C.
Place the carrots in a microwave-
safe bowl and cover with just enough
hot water. Cover and microwave
for about 4 minutes until tender.
Drain, place on a clean cloth
and squeeze out all the liquid.
2 Mix together the carrots and
remaining ingredients. Season with
salt. Roll out into an 18cm x 30cm
rectangle between two sheets of
baking paper. Place on a baking
tray and remove top layer of paper.
3 Bake for about 13 minutes until
crispy on the sides. Cut into 2cm
x 9cm sticks. Cool on the tray.
4 For the dip, blitz together all the
ingredients. Season with salt.
