all kinds of sweet treats − including this pudding.

Mermaid puddings
Makes 6
YOU WILL NEED
250g coloured candy melts
(like blue or purple)
150g Tennis biscuits
60g butter, melted
½ cup icing sugar
2 x 90g packets instant
vanilla pudding dry mix
375ml milk
2 cups cream
Green and pink food colouring
Blueberries
Sprinkles of your choice (optional)

METHOD
1 Heat the candy melts (if using more than one colour, melt one at a time in separate
bowls) in the microwave for about 90 seconds, stirring every 30 seconds, until melted.
2 Spoon into a 9cm silicone mermaid tail mould, tap a few times on the
counter top to get rid of any air bubbles, then scrape the top flat with
a spatula. Refrigerate for about 20 minutes until set. Carefully turn out
and repeat with the rest, remelt the chocolate as necessary.
3 Blitz the biscuit until fine crumbs form and mix through
the butter. Divide between 6 x 160ml glasses.
4 Beat the icing sugar, pudding mixes and milk for 3 minutes. Add the cream and
beat until stiff. Divide between 2 bowls and colour one green and the other pink.
Spoon into a dual piping bag fitted with a star nozzle. Pipe into the glasses.
5 Top with mermaid tails, blueberries and sprinkles. Serve immediately.
