In tribute to chef Luke Dale-Roberts and his restaurant teams,
Sandalene Dale-Roberts has created a book that celebrates
the people behind the scenes and the successes.asterminded by Sandalene

Job took just under two
years to compile. She
worked with Berlin-based design and
photography duo Janine Egger and
Leopoldine Liechtenstein on the
book, which is divided into restaurant
chapters: The Test Kitchen, The Pot
Luck Club and The Shortmarket Club.
The linen-bound hardback book
features illustrations of smiling staff
by Lawrence Moorcroft. Inside are
a selection of recipes and cocktails
from the LDR & Co establishments,
many hand written so you feel as if
you’re being slipped something straight
from the kitchen. The criteria for
inclusion? “Doable,” says Sandalene.
Each chapter is layered with portraits
and photo essays; collages, illustration and hand-written
notes; anecdotes, quotations and foldouts; and intimate
stories of the staff’s passions and pursuits beyond the
kitchen. Woven throughout is a day-in-the-life diary entry
of Luke’s that ends with him cooking a meal for his family,
the recipes of which are in the book. “I wanted it to be
real,” says Sandalene, “and personal to everyone. That’s
why I used mixed media – I went to people’s houses toshoot, to explore their stomping grounds.”
As for the name, Sandalene says it was
developed with Luke and their son Finley.
“We call everyone our family, and I was
chatting to Luke and Finley and we were
joking and saying it’s like “The Family”, like
a Mafia-type thing. That lead to “The Italian
Job” and then the name just hit me:
“The Inside Job”. Finley also suggested
“The Inside Family”, and that would have
been nice, too.”
Of course, the story continues off the
page with the addition of Salsify at The
Roundhouse and The Commissary to
the stable of restaurants. The Inside Job
