HELLO SUNSHINE!
Brightly coloured, juicy, and full
of flavour, there’s something about
the pineapple that brings the sun in.
This granita recipe makes enough
for eight–a great way to add some
freshness to your party.
Ginger-lime
Pineapple Granita
Ingredients
½ cup freshly-grated ginger,
or to taste
½ cup sugar
½ cup water
3 cups chopped pineapple
1 lime, juiced
8 pineapple wedges,
to garnish
Rock salt, to garnish
Method
Place the ginger, sugar, and water
in a small pan over a medium-high
flame. Cook, stirring continuously,
for about five minutes until the sugar
dissolves. Cool and strain, discarding
the ginger. Place the pineapple,
lime juice, and ginger syrup in a food
processor, and blend until smooth.
Pour out into a lipped baking dish
and spread out into an even layer.
Freeze for four hours, until firm.
After four hours, rake with a fork,
cover with cling film, and freeze
again for at least an hour.
Serve with pineapple wedges,
topped with salt.
