  • 350g/12ozrawkingprawns,
    peeledandveinsremoved

  • 1 tbspvegetableoil

  • Seasaltandfreshlyground
    black pepper

  • 150g/5ozsugarsnappeas,
    trimmedandthinlysliced

  • 200g/7oztrimmedkale,sliced

  • ½ bunchfreshcoriander,
    leaves chopped

    • ½ bunchspringonions,
      trimmed andfinelysliced

    • 85g/3½ozroasted peanuts,
      chopped
      Forthedressing

    • 3 tbsptoastedsesameoil

    • 1 tbspsoysauce

    • ½ tbsprunnyhoney

    • 2 tbspricewinevinegar

    • ½ greenchilli,deseeded
      and finely diced

      • 1 tbsppeanutbutter






1 .Firstmakethedressing.Ina
bowl,whisktogetherallofthe
dressingingredientswith4 tbspof
coldwater,thensetaside.
2 .Heata griddlepanovera high
heatuntilsmoking.Meanwhile,
drizzletheprawnswiththe
vegetableoilandseasonwithsea
salt and freshly ground black

pepper.Cooktheprawnson
the hotgriddleforabout1½
minutesoneachsideoruntil
cookedthrough.
3 .Ina bowl,mixtogetherthe
sugarsnappeas,kale,coriander
andspringonions.Addthe
dressingandmixwell.Placein
individualservingbowls,topwith
theprawns,sprinklewithpeanuts
