veyron is awash with bastide towns
and quaint villages, no fewer than
10 of which are ranked among the
most beautiful in France. Situated towards
the south of the Massif Central, it’s a rural
department of contrasts, encompassing
the mountainous plateaux of Aubrac and
the Grand Causses regional park and the
dramatic valleys of the Lot, Truyère and
Tarn. The St-Jacques de Compostelle
pilgrimage route passes through the area.

Capital:Rodez
The small city of Rodez has a towering
Gothic cathedral dominating the old town.
Founded in the 5th century BC by the
Celts, it has attracted much attention since
the opening of the Soulages museum in
May 2014. The museum is dedicated to its
famous son Pierre Soulages, known as ‘the
painter of black’ due to his extensive use of
the colour/non-colour, and described by
former president François Hollande as the
world’s greatest living artist.

Highlights
The Millau Viaduct, which spans the Tarn
valley in southern Aveyron, is the tallest
bridge in the world and an awe-inspiring
tourist attraction as well as a useful stretch
of motorway. For a spectacular viewpoint
visit the Trou (hole) de Bozouls, where the

village of Bozouls perches on the edge of a
gigantic horseshoe-shaped canyon.
The medieval pilgrimage village of
Conques is among the many beautiful
communities, which also include
Villefranche de Rouergue, Espalion,
Estaing, Najac and Belcastel.

Local specialities
King of cheeses Roquefort is matured in
caves in southern Aveyron while northern
Aveyron is the home of ‘aligot’, a comfort
food of mashed potato and tome fraîche
cheese. Other specialities include herbal
pancakes known as farçous and (rarely
enjoyed by Brits) tripous, a snack made
from calf or lamb stomach.
