(Axel Boer) #1

1 fiandino grana padano

Piedmont, Italy
Raw cow’s milk A farmhouse Grana
cheese made with milk from the brown
Alpine cow. It’s fruity and savoury with
crunchy crystals.

Enjoy with a prosecco or Champagne.
(Those lovely bubbles and the grain of
the cheese interact beautifully).

2 tête de moine

Bern, Switzerland
Raw cow’s milk Alpine cheese produced
in a small barrel. There’s a strong, earthy
aroma on the rind, with rich beef broth and
roasted nut flavours. You may have seen
it served in beautiful flower-like curls.

Pair this hard cheese with a
white wine such as riesling.

3 in foglie di castagno

Piedmont, Italy
Cow’s and ewe’s milk Produced by
Beppino Occelli, it’s aged for 18 months
before being wrapped in chestnut leaves.
This imparts a strong and savoury flavour,
with sweetness from the ewe’s milk.

Pair with a skin-contact (also referred to
as orange wine) pinot gris or a sherry.
