CHILL OUT
We all know the golden rule
about wine: serve whites
and rosés cold and reds
at room temperature. But
a glass of chilled red can be
very refreshing on a warm
summer’s day. Light- to
medium-bodied wines, like
Marks & Spencer Fleurie
(£10), work best at a lower
temperature. This easy-
drinking, mulberry-coloured
tipple has supple black
cherry fruit flavours, and
slips down even more easily
after chilling. Or you could
try Tesco Beaujolais Villages
(£7), made from gamay
grapes from the vineyards
of Beaujolais in south
Burgundy. This red’s delicate
fresh fruit flavours are more
pronounced when it’s a little

Herb-crusted pulled lamb shoulder


● Preheat the oven to 160°C/
gas 4.
● Place a shoulder of Welsh
lamb on the bone in a deep
roasting tin.
● Using a pestle and mortar,
lightly crush 4 chopped garlic
cloves, 1 tbsp cumin seeds,
1 tsp fennel seeds, ½ tsp black
pepper and ½ tsp salt. Transfer
to a bowl, then stir in 1 tbsp oil,
the zest and juice of 1 lemon,
a handful of chopped fresh
thyme leaves and a chopped
sprig of fresh rosemary.
● Make a few slits in the

shoulder and rub the herby
mixture over the surface.
● Add 100ml water to the tin.
● Roast in the oven for
45 minutes until the crust has
browned. Then cover with foil
and return to the oven for about
2½ hours, or until the meat is
very tender, basting occasionally.
● Remove from the oven and
rest for 20 minutes.
● To ‘pull’ the meat off the
bone, shred it using two forks.
Serve the lamb in flatbreads
with a minty yoghurt dip and
a crisp green salad.
