6 medium Beurre Bosc pears
1 Ina mediumsaucepan,stirtogether
thehoney,water,lemonandorangezest
andjuice,cinnamonstick and saffron
threads (if using).
2 Peelpearsneatly,leavingthestalkson,
andplaceintheliquid,ontheirsides.
Bringtoa simmer,reduceheatand
simmerverygently,partlycoveredwitha
lid,forabout 1 ½hoursoruntilsoftand
golden.Turnthemoveronceortwice
duringcookingandtopuppanwitha
littlemoreliquidif it lookslikeit needsit.
3 Oncepearsarecooked,removetoa
dish.Turnuptheheatandallowliquid to
boilfora fewminutesuntilsyrupy.
4 Servepearswarmorcoldwitha drizzle
ofthesyrup.If youlike,add a dollop of
natural yoghurt, too.•
