300gcoconutchips(ordesiccatedcoconut)
300gnuts(weusedequalamountsof almonds
andcashews),roughlychopped
300gsunflowerseeds
300gpumpkinseeds
100gsesameseeds
100glinseeds
100gplainpuffed rice (or puffed amaranth,
milletetc)
2 tspcinnamon
1 ¼cupssugar
1 cupoliveoil(coconut oil is also fine)
¾cupwater
1 ¼cupscocoa
1 tspseasalt
3 tsp vanilla bean paste
1 Preheattheovento160°Cfanbake.Put
theoats,coconut,nuts,seeds,puffedrice
andcinnamonina largeroasting tray
andmixwelltocombine.
2 Placesugarina heavy-basedsaucepan
andpourintheoilandwater.Addcocoa
andseasaltandwhisktocombine.Bring
totheboilthenreduceheatandsimmer
for1 minutebeforeremovingfrom the
heatandstirringinthevanilla.
3 Pourthecocoamixtureovertheoat
mixtureandstirwelltoensureallthe
bitsarewellcoatedinchocolate.
4 Bakefor 15 minutesthenstirwell.
Returntoovenandstirevery7 minutes
orsountilcrunchy.This will take
about 30 minutes.
5 Oncecooked,removefromtheoven
andleavetocoolcompletely before
storing in airtight jars.
