INGREDIENTS
300g sweetcorn
3 free-range eggs
30ml milk
75g plain flour
3 spring onions
½ tsp cayenne pepper
Vegetable oil
Salt and pepper
METHOD
1 Mix the sweetcorn and
spring onions in a bowl.
Beat the eggs with the
milk and pour into the
bowl. Season with salt
and pepper. Sieve the
flour with the cayenne
pepper and stir into the
sweetcorn mixture.
2 Add the oil to a frying
pan. You need to shallow
fry these, so ensure the
base of the pan is well
covered. Heat the oil and
then lower the batter
into the pan using a ladle
- about 2 tbsp per fritter.
Fry for a couple of
minutes on each side.
3 Place the fritters on
kitchen roll to remove
any excess oil. Serve
with guacamole.

based diet plays a key role in many aspects

maintaining cardiovascular health. Antioxidants
in such a diet help reduce inflammation, which
builds up in the body when you’re constantly
putting it under the stress of running long
distances. ‘Inflammation is at the heart of many
chronic diseases, like heart disease,’ says James
Loomis, medical director of the Barnard Medical
Center in Washington DC, US. A plant-based
diet may also aid recovery. ‘A diet rich in food
with nitric acid – found in beetroot and other
plant-based foods – helps to improve blood flow,
which helps you recover faster,’ adds Loomis.
