Pork Loin Medallions, Free (with
visible fat removed); £3 for 400g.

Cabbage & potato hash with a fried egg
To serve four, drain and rinse
3 x 300g cans cooked new
potatoes. Dry with kitchen
paper and halve any larger
ones. Spread on a non-stick
baking tray in a single layer,
spritz with low-calorie cooking
spray and roast at 200°C/fan
180°C/gas 6 for 1 hour, turning
halfway. Meanwhile, spray

a non-stick frying pan with
low-calorie cooking spray and
place over a medium-high heat.
Cook 2 finely sliced onions for
10 minutes, or until starting
to soften. Put 1 finely shredded
sweetheart cabbage into a
colander and pour over boiling
water. Add to the pan with
1 tsp grated nutmeg and fry for

6-7 minutes until the cabbage
is very soft. Add the potatoes,
crush roughly with a wooden
spoon and fry for 5-6 minutes.
Fry 4 large eggs in low-calorie
cooking spray until cooked.
Divide the hash between
4 plates and top each with an
egg and a twist of black pepper.
