1 Tbsp olive oil


1 large onion,
finely chopped

Kosher salt


2 cloves garlic, pressed


1 lb ground beef


½ to 1½ tsp chipotle
chile powder

1 tsp ground cumin


½ cup canned tomato sauce


½ small head iceberg
lettuce, shredded
(about 2 cups)

¼ cup fresh cilantro
leaves, roughly
chopped

8 hard corn taco shells,
warmed

½ cup grated
extra-sharp orange
Cheddar cheese

Chopped white
onion, sour cream,
and lime wedges,
for serving

1 Heat oil in a large skillet on medium. Add onion and


¼ tsp salt and cook, covered, stirring occasionally, until


tender, 6 to 8 minutes. Stir in garlic and cook 1 minute.


2 Add beef and cook, breaking it up into small pieces,


5 minutes. Sprinkle with chipotle powder, cumin, and ½ tsp


salt and cook, continuing to break it up, 2 minutes more.


3 Stir in tomato sauce and simmer until slightly


thickened, 4 to 5 minutes.


4 In a bowl, toss lettuce and cilantro. Fill taco shells


with beef and top with Cheddar, then lettuce. Serve with


onion, sour cream, and lime wedges if desired.
