Heat oil for 30 seconds
on high before adding
anything else to
the pan. High temps
caramelize natural
sugars in vegetables
while maintaining crisp-
tender textures.
DON’T CROWD
THE PAN
If your ingredients are
crowded, they’ll run
the risk of steaming
(versus searing). Work in
batches as needed so
pieces have space
