before you heat

(and oil) are piping hot.

HEAT IT UP


Heat oil for 30 seconds
on high before adding
anything else to
the pan. High temps
caramelize natural
sugars in vegetables
while maintaining crisp-
tender textures.

DON’T CROWD


THE PAN


If your ingredients are
crowded, they’ll run
the risk of steaming
(versus searing). Work in
batches as needed so
pieces have space
for max caramelization. ■
