Blooms Cake Tutorial

Enrique lives in Birmingham and works
from home. Originally trained as an
architect, he has always been somehow
connected to the world of baking and sugar
through family and friends. He founded
HAVE+SOME+CAKE around three years ago
when he realised it wasn’t a ‘just for friends
and family’ venture anymore. Enrique’s
speciality is wedding and big celebration
cakes. Being trained in architecture, he likes
to put a spin on everything he does design
wise. For him, it is important with a concept
that the whole design speaks back to him
and that it is a beautiful object - an edible
sculpture in cake form. Enrique has named
this cake Julieta and sees it as a chaotic and
wild representation of nature itself with
vivid colours, watercolours, hand painted,
girly. He chose clematis as they are very
beautiful flowers: big, colourful and fragile.
