Step 1.
Bake 3 x 6” round sponges and 3 x 4” round sponges,
stacking with a good amount of buttercream between
each layer. Spread buttercream all the way around the
edge to give a good crumb coat to both cakes and place
in the fridge. Once set, roll out the white sugarpaste
and cover both cakes. Smooth down the sides with
your palms and trim off the excess with a pizza cutter.
Smooth using Bellissimo flexi smoothers to create a
flawless finish and a straight edge.


Step 2.
To cover the drum, roll out the yellow sugarpaste, paint
the drum with edible glue and lay the sugarpaste on
top. Cut away any excess with a palette knife and gently
smooth over the top with a smoother while the paste
is still soft.


Step 3.
Mix some red and yellow food colour paint and water
it down. Paint a wash of orange watercolour over the
whole drum with a no. 10 paintbrush and allow to dry.


Step 4.
Sprinkle half a teaspoon of black food dust onto a paint
palette and add a little vodka to create a paste. Start
painting thin black lines in different directions across the
whole of the board to give a stained glass effect, then
allow to dry.


Step 5.
Mix a drop of blue edible paint with six drops of white
in the paint palette and water it down with a no.
10 paintbrush. Water wash both tiers for an almost
transparent blue tone and allow to dry. If the colour is
too dark, wash over the top with more water and this
will dilute the colour.
Attach the bottom tier to the drum with some royal
icing. Insert three dowels into the centre of the cake in a
triangular form and trim off the excess. Use a little royal
icing over the dowels, position the top tier in the centre
of the bottom tier and allow to set.


Steps 6a & b.
Take a no. 2 paintbrush and paint on flower shapes by
dabbing the paintbrush with the orange paint (made
from the yellow and red paint made earlier).


Step 7.
Paint a few small dots of paint into the centre of the
flower for detail. Add more flowers on either side of the
cake on both tiers.


Step 8.
Mix a little green and white paint and begin to paint
strands of grass with a no. 1 paintbrush, from the base
of the bottom tier upwards. To join the flowers on both
tiers, keep layering the grass strands. Set aside to dry.


Steps 9a & b.
Take a piece of card and fold into quarters to make a
mould for the butterflies to sit in. Roll out the yellow
flower paste thinly and cut out two small and one large
butterfly using the butterfly cookie cutters.


Step 10.
Lay them into the cardboard mould so the centre of the
butterflies sit in the fold and allow them to set hard.
