Pre-heat oven to 180ºC
Make a ginger moon!
110g plain
flour
60g soft
butter
85g brown
sugar
1 egg 2 teaspoons of
ground ginger
A pinch of
salt
Different flavours
of jam
Mix together
the butter,
sugar, ginger
and salt.
Whisk the egg
and stir into the
mixture. Add
the flour.
Knead the dough
into a ball. Cover
with cling film and
put in the fridge
for 1 hour.
Dust the table with
flour and roll the
dough into a circle
as thick as a pound
coin.
Cover with cling film
and make craters by
pressing pen lids and
bottle caps onto the top.
Place the moon on a
greased baking tray
and bake in the oven
for 15-20 mins.
Let the moon cool. Fill the
craters with jam. Break the
moon into pieces and share
with friends!
