Give these cooling summer recipes a go, as recommended by TCM practitioner Jonquil Westwood Pinto.
GA ZPACHO
Serves 1
■ Stale bread 1-2 slices, soaked in
cold water
■ Tomatoes 300g
■ Red pepper ½, chopped
■ Cucumber ¼, peeled
■ Extra virgin olive oil 1-2 tbsp
■ Garlic ½ clove (to taste)
■ Salt and pepper (to taste)
■ Sherry vinegar ½tbsp
1 Blitz all ingredients in a blender
until smooth. Serve with croutons
and garnished with coriander.
PICK N MIX SALAD
As a general principle
use one or more items
from each category:
■ Lightly cooked veg:
asparagus, purple
sprouting broccoli,
roast caulifl ower.
■ Cooked grains/
legumes: quinoa,
brown or wild rice,
beluga lentils.
■ Salad ingredients:
tomatoes, leafy
greens, cucumber,
radish, red onion
■ Herbs: mint, basil,
oregano.
■ Seeds: pumpkin,
sunfl ower, pine nuts
(lightly dry toasted in
pan), pomegranate
seeds.
■ Protein: boiled egg,
feta, cooked chicken
or tuna.
1 Mix all the ingredients
in a bowl tossed with
olive oil and lemon juice.
Add the seeds last.

COOLER
■ Watermelon 150g
■ Lemon ¼, juiced
■ Fresh mint leaves 1tbsp
1 Mash the watermelon in a bowl.
Add the lemon juice. Sieve the
fl uid into a glass. Serve garnished
with fresh mint leaves.
