The appetiser of White Asparagus,
Morels and Fava Beans was served
with a strong bodied Argiano
Brunello 2014 and Barolo GG
2014, the latter was smoky and full
of dark fruit flavour. The Guinea
Fowl was the highlight of the night,
perfectly cooked with a subtle
gamey flavour and served atop
smooth sunchoke purée and fresh
morels. The poultry was a good
match with the fine tannins and
spiced black cherry notes of the
Argiano Brunello Riserva 2012, and
the berry flavour and long finish of
the Barolo Castelletto 2013.
