wonders on older chicken carcasses.


Verdict
From his careful extraction of sweetbreads from each carcass to
the use of multiple chickens to make one skewer of sweetbreads,


MARINATED GRILLED
CHICKEN WITH MISO


Makes 1 serving



  • 85g white miso

  • 85g sugar

  • 2 tbsp sake

  • 1 tbsp mirin

  • 1 tbsp soy sauce

  • 1 chicken thigh

  • 1 scallion


» Cook sugar and miso in saucepan
over medium heat. Whisk constantly,
until the mixture is soft and light.
» Add sake, mirin and soy sauce,
and continue whisking till the
mixture comes up to a gentle boil.
Remove from heat and set aside to
cool.
» Marinade thigh in miso sauce,
making sure that it is entirely
covered. Marinade for 24 hours
minimum, but preferably for 2-3
days.
» Wipe off excess marinade. There
should only be a thin layer on the
flesh.
» Grill. The marinade has a
tendency to burn easily, hence
be sure to keep your eye on the
chicken.
» Once the juices run clean, remove
from grill.
» Cut into slices and garnish with
chopped scallion.
