SKIRT

From its bold, oversized installations hanging from the ceiling
and the open kitchen in the middle of the restaurant to the
beef-themed details on your tableware, this restaurant at W
Sentosa - Sentosa Cove is very stylishly decked out. It's also
complemented by friendly, unaffected service that makes the
dining experience a very relaxing and enjoyable one.
As part of the W brand which expounds a playful cocktail
culture, you can expect cleverly conceptualised drinks at
Skirt, such as Penicillin. Think honey, lemon juice and fresh
ginger, fortified with a good dose of bourbon and topped with
aromatic Jagermeister. Unusual wines feature on its wine list
too.
But the raison d'etre of Skirt is its premium aged
steaks that are priced by the kilogram. The star is its Cape
Grim 30-day dry-aged beef tomahawk which is tender,
delicately flavoured and best enjoyed medium rare. Another
recommended option is the Sher full blood wagyu skirt steak
grilled to perfection on the parilla grill, at 350 degrees Celsius
with maple and hickory wood. For an interesting starter,
try pressed laksa octopus. The octopus is cured in laksa and
served with Hainan sauce, compressed watermelon, yuzu
cucumber and spiced mango gel.
Desserts here are well worth busting your calorie quota
for—have the golden gaytime of rich Dulce de Leche ice cream
encased in dark chocolate shells, and the banana “pizza”.
