we aim to work with
various coffee labels to
bring out the best new beans to our customers
in the AM, and some solid handcrafted
cocktails in the PM slot. The bartenders at
Foxtrot are trained to make A-grade brews,
while churning out well-balanced cocktails
with homemade syrups.
Our extensive coffee menu has on offer
some specials like Chemex and Ibrik that
bring forth coffee presentation skills, where
each of coffees can be made using various
beans to enjoy something new each time.
Cold brews have also been added.
As for cocktails, we wanted to offer great
quality concoctions at affordable prices to
our young consumers. The fun factor has
been retained with great presentation and
techniques like nitro-brews, or great flavours
like Pop! infusing pop-corn flavour-profile in
a drink!

What unique things are in the pipeline
at Foxtrot?
Workshops are organized to educate people
about the growing culture of coffee in India,
as well as the basics. Our calendar of activities
also include workshops on making coffee to
great cocktails, art & craft, art exhibitions
and cultural events. An interesting initiative
is our bar internship program for individuals
interested in bartending and coffee-making,
a passion that the youth can pursue besides
creating opportunities for part-time jobs.

What’s next from Azure Hospitality?
Foxtrot our way into new cities and a very
special international venture soon!

Please share something about Foxtrot,
its concept and USP?
An extension of Sly Stories by Azure
Hospitality, Foxtrot is a creative crossroad of
cultures, where we bring back the concept of
the “third place” – a place away from home
or the office, where all creative folk can spend
time in sync with their passions and interests
in a space that facilitates creativity, interaction,
sharing of ideas or just general musing. With
the concept of immersive subcultures at a
coffee and cocktail bar, the aim is to create
experiential dining spaces with a refined touch
at a friendly price point, while specializing in
artisanal coffee and craft cocktails.

How did this Idea emerge?
We pondered about what’s missing in today’s
market. So we started with what people
normally do when they step out; and some
winners were watch movies, eat out, drink,
party or hang at a coffee shop. Hence, we
decided to merge the AM and PM needs
of individuals all under one roof, and take
things up a notch with the growing home-
brewed coffee culture of India. To raise the

fun quotients, we felt that it’s necessary to
give people more reasons to step out- so by
accentuating various subcultures, offering
workshops, discussion pads, pop ups, art
exhibits, flea markets and much more, we
were convinced that Foxtrot would be the go-
to place for the new-gen, offering affordable
fun ‘cuz as humans, we crave experiences!

What led to the journey and locations
from Bengaluru to Khan Market to cyber
hub?
All our locations are based on couple of
common factors – the creative quotient
around, how experimental the audiences
are, and of course run-of-the-mill business
requirements. Nonetheless, priority was
always finding neighbourhoods that gave us
access to interesting and fun loving crowd.

What is the Food Philosophy at Foxtrot?
While working on the menu at Foxtrot, it
crossed our minds as to why we have never
leveraged the skills of all the great chefs
individually associated with other Azure
brands that are so well accepted in the market.
Hence, we brought together Varun Pereira
from Sly Granny, Sudhandhu from Mamagoto,
Ravi Saxena from Dhaba Estd 1986 Delhi
and Utkarsh Bhalla from Hotel Delmaar/Sly
Granny to create what they otherwise could
not due to brands they normally worked in.
The result was that they came up with some
of the coolest and most delicious hyperlocal
and global recipes. We proudly love calling it
“Azure’s Chefs Collab”.

What is the aim behind this
concept and offerings in both the
segments?
India is witnessing a boom in coffee
culture. People, however, only get to have

Foxtrot, a unique hybrid coffee and cocktail bar by
Azure Hospitality opened at DLF Cyber Hub, taking
the G-town by storm. In a tete-e-tete with Outlook,
Rahul Khanna & Kabir Suri, Founders of Foxtrot talk
about the fourth such café, the latest in Gurgaon,
which is an initiative of the leading company, F&B.
